Mmmmlicious Muesli Bars

I am someone who knows how fortunate a life she has and I'm terribly grateful for that but that doesn't mean that from time to time, life gets me down. I've just had one of those weeks!

The weather in Tassie is near antarctic and at 11am this morning it was still only 3 degrees outside, brrrrr. We have also had some family sadness with Roge's Nan passing as well as one of my family on life support after a terrible car accident.

So needless to say my motivation has been low this past week and hence why the blog has been a bit quiet. I am however feeling a bit better today and into the kitchen I've been, making a batch of muesli bars.


I don't think I can ever buy muesli bars again after discovering this recipe. They taste better, they're more wholesome and they're far cheaper to make than buying them. Probably the only downside is you usually have to go to a health food shop for the wheatgerm but buy a bit extra when you do and you can store it in the fridge for next time. (Note: I use LSA mix as an alternative to wheatgerm)





  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1/2 cup wheatgerm
  • 1/2 cup sesame seeds
  • 1/2 cup sunflower kernels
  • 1/2 cup pumpkin seeds (pepitas)
  • 1 cup sultanas
  • 125g butter
  • 1/2 cup honey
  • 1/3 cup brown sugar

1 - Toast all the dry ingredients in a frypan on the stove.
2 - In a saucepan melt the butter, sugar and honey together and bring to the boil. Then simmer on the stove for up to 7 minutes.
3 - Combine the dry mix with the liquid and press firmly into a lined square dish.
4 - Put into the fridge until hardened and then cut into desired sized slices.




Roge is a huge fan and takes them to work for his morning tea. Admittedly they're a bit sweet for my taste buds so I might eat one or two but I leave the rest for him (I'm a good wife eh!)


Even when bought ones are on special for $5, I can make double the amount for the same price using this recipe and I know they're so much nicer. Why not give them a go, it doesn't take long and the smell of the toasted ingredients makes the house smell awesome!

Oh, and store them in the fridge in a air tight container.

  1. Alex, that sounds bloody awful. Feeling like that is totally understandable.
    Im not much of a muesli bar kinda girl either but im going to save your recipe and give it ago for Bears lunch box. Ive tried a few different recipes and just hasnt turned out right and doesnt taste the best either.
    I hope you all start to feel better soon, take it day by day.

      I'm not feeling too bad, I think it's just survival mode (but have had a few tears of course)! We're trying really hard to just stay positive and try to go about our days as normal as possible. That sounds weird I know but I think it's the best way to approach it.

  2. Nawww. Tears are expected and there is nothing wrong with that.
    Alex!!! I finally have some photos up of our renovations, hopfully it'll be an ongoing thing now we've started again. We started the hallway last year but for some reason we stopped. But now its on again woo :) check our hallway out.
